Rapidly cooling eggs can double shelf life, decrease risk of illness

Monday, June 11, 2012

Taking just a few seconds to cool freshly laid eggs would add weeks to their shelf life, according to a Purdue University study.

The rapid-cooling process, developed by Kevin Keener, a professor of food science, uses liquid carbon dioxide to stabilize the proteins in egg whites so much that they could be rated AA ? the highest grade for eggs ? for 12 weeks. Earlier research showed that the same cooling technology could significantly reduce occurrences of salmonella illnesses.

Eggs cooled under current methods lose the AA grade in about six weeks, Keener said.

"There is no statistical difference in quality between eggs as measured by Haugh units just after laying and rapidly cooled eggs at 12 weeks," he said. "This rapid-cooling process can provide a significant extension in the shelf life of eggs compared to traditional processing."

Haugh units measure an egg white's protein quality.

Keener's results, published in the journal Poultry Science, also show that membranes surrounding the eggs' yolks were maintained for 12 weeks when eggs were rapidly cooled. That membrane is a barrier that keeps harmful bacteria from reaching the yolk, a nutrient-rich reservoir that bacteria could use as a food source.

"The structural integrity of the yolk membrane stays strong longer, which may provide a food safety benefit," he said. "The membrane being stronger would be another defense against bacterial invasion, such as salmonella."

The rapid-cooling technology takes liquid carbon dioxide and turns it into a "snow" to rapidly lower the eggs' temperature. Eggs are placed in a cooling chamber and carbon dioxide gas at about minus 110 degrees Fahrenheit is generated. The cold gas is circulated around the eggs and forms a thin layer of ice inside the eggshell. After treatment, the ice layer melts and quickly lowers an egg's internal temperature to below 45 degrees, the temperature at which salmonella can no longer grow.

Keener's previous research showed that the carbon dioxide in bicarbonate form significantly increases the activity of lysozyme, an enzyme in the egg white that has bactericidal properties.

Traditionally, eggs are at more than 100 degrees when placed into a carton. Thirty dozen eggs are then packed in a case, and 30 cases are stacked onto pallets and placed in refrigerated coolers. The eggs in the middle of the pallet can take up to 142 hours - nearly six days - to cool to 45 degrees, Keener said.

Keener said a 2005 U.S. government report showed that if eggs were cooled and stored at 45 degrees within 12 hours of laying, there would be about 100,000 fewer salmonella illnesses from eggs in the nation each year.

Rapid cooling could also increase the ability to export eggs to places where this isn't possible today.

"You could send eggs anywhere in the world if you could get even eight weeks of shelf life at AA quality. We're seeing 12 weeks," Keener said. "Right now, you can't ship eggs anywhere in the world and expect to retain that quality."

Keener said with additional funding he would continue to study the benefits of rapid cooling, including inoculating the inside of shell eggs with Salmonella and examining how other proteins in the whites and yolks of eggs are affected.

DEARBORN, Michigan ? Ford on Monday took the wraps off its 2013 Ford F-150 police and fire trucks.

The so-called "Special Service Vehicle package" will be available as a no-charge option on XL models. It can be ordered in SuperCab or SuperCrew configurations with a choice of 5.0-liter V8 or 3.5-liter EcoBoost engines and in 4x2 and 4x4 models.

Ford said it developed the option in response to customer requests. The automaker revealed a tweaked F-150 last week.

"Our fleet customers have been asking us to create this option for F-Series trucks," said Tony Gratson, Ford government sales manager, in a statement. "We're confident the current and updated 2013 F-150 equipped with the SSV Package will be of particular interest to our government customers with rugged jobs such as law enforcement, firefighting, and national and state park patrols."

The SSV package includes a high-capacity 220-amp alternator to power lights, sirens and other equipment.

Samsung fights Apple move to block Galaxy sales

(AP) ? Samsung Electronics Co. said Thursday it will fight Apple's move to stop U.S. sales of its new Galaxy phone in the latest flare-up of an intellectual property battle between the world's top smartphone makers.

Samsung said it will vigorously oppose Apple's request for a court to ban sales of the Galaxy S III smartphone and still plans to go ahead with the device's scheduled release in the U.S. on June 21.

The South Korean company said in a statement that it will "demonstrate to the court that the Galaxy S III is innovative and distinctive."

On Tuesday, Apple Inc. asked a U.S. district court to temporarily ban sales of the S III smartphone before its launch in the United States. The maker of the iPhone accused Samsung of infringing two Apple patents.

The request, if accepted by the U.S. District Court for Northern California, would deal a blow to Samsung's attempt to get a headstart on sales of Apple's next iPhone.

The S III smartphone went on sale in Europe on May 29 and will be offered by around 300 mobile carriers in Asia and North America later this month.

The early launch puts Samsung in a favorable position to take a bigger chunk of the lucrative smartphone market. While Apple is keeping mum on its annual iPhone upgrade, many analysts expect the new iPhone to go on sale as early as July.

Samsung has become the biggest threat to Apple's clout in the mobile market as its Galaxy series of smartphones won popularity among consumers seeking an Android-powered device.

Most market research firms say Samsung overtook Apple in smartphone shipments for the first time during the first three months of this year.

Samsung and Apple have been embroiled in bitter patent lawsuits in North America, Europe and Asia since Apple accused Samsung of copying its iPhone in April 2011.

Chief executives of the two companies met in San Francisco last month after a court instructed them to negotiate, but the talks didn't produce a settlement.

Amid the legal battles, the two companies continue to do business with each other.

Samsung counts Apple as among its largest buyers of chips and display screens while Apple relies on Samsung for mobile components.

'Madagascar 3,' 'Prometheus' team for big weekend

(AP) ? Circus animals and space beasts have lifted Hollywood to a huge weekend.

The cuddly critters of "Madagascar 3: Europe's Most Wanted" led the weekend with a $60.4 million debut domestically, followed by a big opening for Ridley Scott's alien saga "Prometheus" at No. 2 with $50 million, according to studio estimates Sunday.

DreamWorks Animation's "Madagascar 3" was the family favorite for the weekend, reuniting voice stars Ben Stiller, Chris Rock, Jada Pinkett Smith and David Schwimmer as the zoo animals continue their travels by joining a circus.

"Madagascar 3" outdid the $47.2 million debut of the 2005 original, though it came in behind the $63.1 million opening of the first sequel, 2008's "Madagascar: Escape 2 Africa." ''Europe's Most Wanted" had the added benefit of today's higher ticket prices and a bump from fans who caught 3-D shows, which cost a few dollars more than 2-D screenings.

Still, fans remain loyal to the franchise, and "Madagascar 3" received generally better reviews than the previous two installments.

"It's the beloved characters and their comic adventures. And 'Madagascar 3' is critically the best-reviewed of the franchise. Both audiences and critics really love this one the most," said Anne Globe, head of marketing for DreamWorks Animation.

"Madagascar 3" also took in $75.5 million internationally for a worldwide debut of $135.9 million.

"Prometheus," from 20th Century Fox, stars Noomi Rapace, Michael Fassbender and Charlize Theron in an offshoot of director's Scott's 1979 sci-fi horror tale "Alien." ''Prometheus" did big business despite an R rating, which can limit a movie's audience since fans under 17 must see it with an adult.

Conventional wisdom is that action films should come in with a PG-13 rating to cast the widest net possible for its audience.

"A $50 million weekend disproves that rule, for sure," said Chris Aronson, head of distribution for 20th Century Fox. "This movie is so special. It's visually stunning, great storytelling as Ridley is known for. It's Ridley Scott's vision. I'm an unabashed fan of the movie, and the performance at the box office bears that out."

The movie added $39.2 million overseas, bringing its international total to $91.5 million and its worldwide take to $141.5 million since it began rolling out in some markets a week earlier.

The one-two punch of "Madagascar 3" and "Prometheus" lifted Hollywood out of an early dip in summer-season revenue. After three-straight weekends of declining receipts, domestic business totaled $177 million, up 29 percent from the same weekend last year, when "Super 8" led with $35.5 million, according to box-office tracker Hollywood.com.

"It has to do with the variety of movies in the marketplace," said Hollywood.com analyst Paul Dergarabedian. "This is a perfectly programmed summer weekend with a PG-rated animated family film combined with an R-rated, intense sci-fi movie."

The previous weekend's top draw, Universal's "Snow White & the Huntsman," slipped to third-place with $23 million, raising its domestic total to $98.5 million.

Sony's "Men in Black 3" finished fourth with $13.5 million, putting its domestic receipts at $135.5 million.

The superhero smash "The Avengers," from Disney's Marvel Studios, was No. 5 with $10.8 million, lifting its domestic total to $571.9 million. The year's top-grossing film, "The Avengers" added $7.8 million overseas, raising its international haul to $824.4 million and its worldwide revenue to just under $1.4 billion.

Lionsgate's "The Hunger Games," No. 2 on this year's box-office chart, took in $1.1 million to cross the $400 million mark. Its domestic total stands at $400.3 million, and the film has taken in nearly $650 million worldwide.

Estimated ticket sales for Friday through Sunday at U.S. and Canadian theaters, according to Hollywood.com. Where available, latest international numbers are also included. Final domestic figures will be released Monday.

1. "Madagascar 3: Europe's Most Wanted," $60.4 million ($75.5 million).

2. "Prometheus," $50 million ($39.2 million international).

3. "Snow White & the Huntsman," $23 million ($24.6 million international).

4. "Men in Black 3," $13.5 million ($38.3 million international).

5. "The Avengers," $10.8 million ($7.8 million international).

6. "The Best Exotic Marigold Hotel," $3.2 million ($342,000 international).

7. "What to Expect When You're Expecting," $2.7 million.

8. "Battleship," $2.3 million.

9. "The Dictator," $2.2 million ($4.9 million international).

10. "Moonrise Kingdom," $1.6 million.

Britney Spears, Demi Lovato Walk Off During 'X Factor' Audition

Sources say judges 'didn't want to waste their time' with lousy contestant in Kansas City.
By Jocelyn Vena

<P>One "X Factor" contestant learned what happens when you attempt to pull a fast one on the judges. Over the weekend, while Britney Spears, Demi Lovato, L.A. Reid and seat-filling judge Louis Walsh (who was assisting an ill Simon Cowell) were in Kansas City, Missouri they walked out on one contestant who attempted to audition with his back to the judges.</P><P>According to People.com sources, not only did the contestant audition with his back to the panel, but he also wasn't all that talented of a singer, adding insult to injury. "It was really awkward," an eyewitness told the site of the kooky audition. "You could tell the judges were done. I don't think they had a choice. They didn't want to waste their time."</P><P></p><div class="player-placeholder right" title="Britney Spears Explains Why She Wanted To Be A Part Of 'X Factor'" id="vid:769620" width="415" height="255"></div><p></P><P>Another onlooker added that the male contestant didn't leave the judges much of an option given his lack of talent. "He was one of the worst singers and had a bad attitude ... [The judges] all hated it and walked off," the source said. Additionally, he had no idea they had walked out since his back was to them for his entire performance.</P><P>Everyone except Britney eventually made their way back to the judges' table to hear the last contestant. Spears' absence was met with the audience chanting, "Where's Britney?" However, she was only gone for a short time, as she returned later on for another batch of contestants.</P><P>Spears and Lovato made their debut as "X Factor" judges in late May, weeks after Cowell and Reid appeared at the Fox upfront alongside the singers to announce them as additions to the show. "Just really being able to be there and inspire the other contestants ... they're so young and they're trying to fulfill their dreams," Spears said at the event. "It's just a whole beautiful concept. It's just really cool."</P><P></p>

LG Optimus L7

In its mere 8.7 mm slim body, the LG Optimus will house a single-core 1 GHz Qualcomm Snapdragon mobile processor along with an Adreno 200 graphics chip. LG has provided 1 GB RAM and offered 4 GB onboard storage out of which only 2.8 GB is user accessible. It also boasts a 1700 mAH battery which is one of the biggest in this price range.
